Cucumber sandwiches are a traditional finger sandwich commonly served at English tea parties. They are made with thin slices of cucumber and white bread, with the crusts removed. Some variations may include butter or cream cheese as a spread, and dill or mint as a garnish. They are typically served as part of a tea service alongside other sandwiches, pastries, and scones.
I make the rich, cream cheese version and love to serve these delicate and elegant sandwiches at tea time or as an after school snack for my children.
I am sharing my recipe for Cucumber Sandwiches made with ingredients easily available in India and worldwide.
Recipe for English Style Cucumber Sandwiches
Ingredients:

Products I use that are locally available in India
- 12 slices fresh bread (as fresh as you can get)
- 2 cucumbers – peeled or unpeeled
- 2 tablespoons cream cheese or Cheese Spread (100 grams Amul Cheese Spread, Plain)
- 2 tablespoons Mayonnaise (Hellman’s plain, unflavored)
- 1 teaspoon Mixed Italian Spices or Pizza seasoning (Keya)
- Salt and Pepper
- Optional – Fresh dill
Directions:

Cream Cheese, Mayo and Seasoning Spread for Cucumber Sandwiches
1. In a bowl, mix together mayonnaise, cheese spread and Italian/Pizza seasoning.

Sliced Cucumber for Sandwiches – You can keep it unpeeled or peel it
2. Thinly slice cucumber. You can peel them or use unpeeled.

Traditional English Cucumber Sandwiches are always crustless
3. Cut the crusts from the bread slices using a sharp knife.
4. Spread the cheese-mayo mixture on all slices of bread. Alternatively, you can butter one side and use spread on the other. I don’t use butter.
5. Layer cucumber slices on top of half the slices and sprinkle salt and pepper. Place the remaining slices of bread on top of the cucumber, creating sandwiches.
6. Sprinkle chopped dill on top of the cucumber slices (optional).
7. Cut each sandwich into four triangles. Or into squares! Serve with a cup of English tea and enjoy!
